Jerk Chicken Tacos

These Jerk Chicken Tacos are the perfect combination of delicious and healthy. They are a great option for an easy and frugal lunch.

Ingredients

  • Chicken breast tenderloins (0 sp)
  • G Hughes Sugar-Free BBQ Sauce (0sp)
  • Mangos (0 sp)
  • Cilantro (0 sp)
  • Fat-free mozzarella cheese (0 sp)
  • Mission Carb Balance Fajita Flour Tortillas (1sp each)
  • Optional: Garlic, Cayenne Pepper (0 sp)

Directions

Wash and trim the chicken, and then place in the bottom of the crockpot. You’ll want to cover the chicken with the G Hughes Sugar-Free BBQ sauce. I made these with the original flavor, but I’m sure it’d taste great with the Honey BBQ or Sweet and Spicy flavors too! I also added some fresh garlic and a heavy amount of cayenne pepper in the crockpot to give it that “Jerk Chicken” taste! Cook on high for about 4 hours. Once the chicken is cooked, use a fork to shred it. The great thing about this recipe is that you can eat the chicken plain or use it for other meals throughout the week such as a flatbread, wraps, nachos, etc!

To make the tacos, place the chicken on the Mission Carb Balance wraps, sprinkle with cheese, cubed mango, and fresh cilantro. Just like that, you have Jerk Chicken Tacos weighing in at 1 Smart Point each! I love to enjoy these with a side of fruit or pretzels.
