    Skinny Ranch

Ranch has definitely been one of the hardest things for me to cut back on over the past several months. When I started tracking my food, I honestly didn’t realize how many mindless calories and WW points I was using for condiments! I have learned to like the “light” store-bought ranch, but still use way more than most people! Seriously- on pasta salad, pizza, pretzels, wings, veggies, pickles… you name it. So, after going to the depths of Pinterest, I decided to give the Greek Yogurt Ranch thing a try and was pleasantly surprised! It’s not quite as creamy and has a little more “tang” to it, but it definitely…

    Light Baked Brie

This Baked Brie is one of my favorite recipes! I know, I say that a lot- but this is. so. good. It’s one of my favorite dishes to make for happy hour or as an appetizer for literally any gathering. Every time I make this dish, it’s completely gone by the end of the night- and yes I’m including happy hour with one other person in this statement! In the rare event that there is any leftover, it makes an awesome “breakfast of champions!” Another huge plus is that this dish is only three ingredients and it literally takes all of 60 seconds of prep time. This recipe comes out…

    Easy Crockpot Cobbler

If you’re from the south, you know that a good cobbler is a must-have in the summertime! And everyone loves a good fruit cobbler- am I right?! This recipe is SO incredibly easy, you seriously won’t believe it! I’m a huge fan of recipes you can throw together and leave so that I’m not busy cooking while we have friends and family over, especially during the summer! I’d 100% rather be hanging out outside, swimming, playing cornhole, and listening to music instead of running around a hot kitchen. So far my favorite versions of this Crockpot Cobbler are the blueberry and strawberry, but you can use just about any fresh…

    Healthy Coffee Creamer Alternative!

Not sure about y’all- but there are few things in this world I appreciate more than a hot, creamy cup of coffee! What I didn’t realize until I started WW (Weight Watchers) last year was how many points/calories I was using up for my beloved morning cup… or 3. Cue panic mode when I had all of a sudden used up half of my daily points on coffee creamer. I started looking into the nutrition facts for my typical drink orders at restaurants and YIKES! 50+ carbs (sometimes as much as 70 g) and 400+ calories for ONE DRINK- I knew there had to be a better way to get…

    Crockpot Pulled Pork

This pulled pork recipe is SO easy and perfect to throw in the crockpot before you head off for work or on a slow weekend morning! The finished product is so delicious and can be used for a variety of different meals! We can usually make one of these and eat on it for several days. You’ll learn soon enough that I’m a big fan of cooking a large portions of meat and then using the leftovers for tacos, pizza, quesadillas, nachos, wraps, etc.! It definitely keeps us from getting tired of eating the same thing for days in a row and makes for a super quick dinner on busy…

Junkyard Jim’s Eastern NC BBQ Sauce

Ironically enough, this recipe for Eastern NC BBQ sauce was developed in Northern VA… I guess you can say we’re missing the great state of NC a bit! If you are at all familiar with North Carolina, then you know that the vinegar vs. tomato based BBQ debate is almost as serious as college football. There are several different variations of this BBQ sauce that we’ve experimented with, but today I’m going to share my favorite- the Brown Sugar + Garlic version! This one has been the biggest hit by far, and is the sauce used in the Crockpot Pulled Pork recipe! Ingredients: 1 cup White Vinegar 1 cup Apple…
