Easy Crockpot Cobbler

If you’re from the south, you know that a good cobbler is a must-have in the summertime! And everyone loves a good fruit cobbler- am I right?! This recipe is SO incredibly easy, you seriously won’t believe it! I’m a huge fan of recipes you can throw together and leave so that I’m not busy cooking while we have friends and family over, especially during the summer! I’d 100% rather be hanging out outside, swimming, playing cornhole, and listening to music instead of running around a hot kitchen. So far my favorite versions of this Crockpot Cobbler are the blueberry and strawberry, but you can use just about any fresh fruit you’d like.

You Will Need:

  • 1 box white or yellow cake mix ( I prefer the Pillsbury Sugar-Free one to save on some calories)
  • 1 pound of fruit (Strawberries, Blueberries, Peaches, etc. or a blend)
  • 1 stick of butter or butter substitute
  • Optional: Chocolate chips
  • Optional: Vanilla ice cream (Light Cool Whip is a lower-calorie alternative for this!)

Instructions:

  1. First- Rinse fruit and cut into bite-sized pieces if necessary.
  2. Layer fruit in bottom of large crockpot.
  3. If you want to use chocolate chips, take a hand full and layer over the fruit.
  4. Next, dump entire box of cake mix on top of the fruit and DO NOT MIX!
  5. Slice up your stick of butter and place on top and DO NOT MIX!
  6. Cover and cook on high for 2 hours.
  7. Finally! Serve with vanilla ice cream and try not to eat the entire cobbler!

Makes 10 Servings.

Seriously- it’s that easy! And definitely not the most unhealthy dessert option available. Using the sugar-free cake mix and no chocolate chips, this cobbler comes in right around 200 calories per serving.
