Crockpot Pulled Pork

This pulled pork recipe is SO easy and perfect to throw in the crockpot before you head off for work or on a slow weekend morning! The finished product is so delicious and can be used for a variety of different meals! We can usually make one of these and eat on it for several days. You’ll learn soon enough that I’m a big fan of cooking a large portions of meat and then using the leftovers for tacos, pizza, quesadillas, nachos, wraps, etc.! It definitely keeps us from getting tired of eating the same thing for days in a row and makes for a super quick dinner on busy weeknights.

I will typically buy a couple of these plain pork tenderloins and throw them in the freezer until we’re ready to use them! You can also buy these pre-marninated, but I personally prefer to season them myself- which helps cut down on the sugar/carbs a lot of the time.

Ingredients:

  • 1 plain, unseasoned pork tenderloin
  • 1 apple- sliced
  • 1.5 cups Jim’s Eastern NC BBQ sauce (recipe linked here)
  • Dry rub:
    • Garlic powder
    • Himalayan sea salt
    • Black pepper
    • Lemon pepper
    • Brown sugar
  1. Thaw frozen tenderloin for ~2 hours until it’s soft enough to cut slits in. If you didn’t freeze your tenderloin, you can skip this step!
  2. Rinse well and place tenderloin in large crockpot.
  3. Cover top with each of the “Dry Rub” ingredients listed above, turn over tenderloin, and repeat so that both sides have seasoning.
  4. Cut slits about halfway through the top of the tenderloin but do not cut all the way through. Place apple slices into the slits.
  5. Pour 1 cup of Jim’s Eastern NC BBQ sauce (linked here) over tenderloin and set the remaining 1/2 cup aside for later.
  6. Place the lid on the crockpot and cook on low for ~8 hours or high for 4-5 hours.
  7. Use forks to shred the tenderloin. Pour the remaining BBQ sauce over it and let sit for a few minutes.
  8. Enjoy!
